1. How to prepare and eat Yangcheng Lake hairy crabs: Steamed crabs

This is the best way to eat it. Select a large, fully-limbed, and energetic Yangcheng Lake hairy crab, wash it in clean water, tie the crab's two claws and eight legs into a ball with rope or grass, and steam it in a pot. It can also be cooked in water. When putting the food into the pot, you can add some ginger, perilla, rice wine and salt to cook it together to avoid the cold and remove the fishy smell. When eating, it is served with the carefully prepared sauce and rice wine, which can not only add flavor and remove the fishy smell, but also fully bring out the delicious taste of Yangcheng Lake hairy crabs. When steaming crabs, please note: cook them for at least 20 minutes after the water boils.

2. How to cook and eat Yangcheng Lake hairy crabs (Part 2): Drunken crabs

First, prepare the drunken liquid and drunken dew. Use fine salt, onion, old ginger, cinnamon, star anise, and pepper to make the "drunken liquid". Pour it into a pot and boil it over high heat. Cook for a while, remove the onion, ginger, cinnamon, etc., filter with gauze to remove impurities, and pour it into a clean jar after cooling. Then make the "drunken dew" with sugar, MSG, and sorghum wine. Pour the drunken dew into the jar of drunken liquid and stir well. Then process the hairy crabs. Take the healthy live hairy crabs, wash them, and keep them in water for two to three days, and change the water every day to remove the dirt in the hairy crabs' bodies. Then take out the crab and let it sit to let it spit out the water. Then put a little salt in the crab's navel and wait for a while. Finally, you can put the hairy crabs into the jar and immerse them completely. Seal it and store it for 10 days before eating. Note: The salt content in the drunken solution cannot be less than 20%.

2. How to prepare and eat Yangcheng Lake hairy crabs (Part 3): Fried crabs with pepper and salt

This dish is suitable for drinking. Cut the fresh crab into pieces, soak it in scallion, ginger and cooking wine for a few minutes, coat it with flour and fry it in a pan until golden brown, then add tofu, ginger, scallion, salt, soy sauce and stew it until tasty. It is best eaten with rice wine, and Huadiao is the best rice wine. You can also enjoy the modern-style hairy crab with a glass of ice-cold beer.
