4. After steaming, let it cool and test the temperature with your hand. It cannot be higher than the temperature of the human body, otherwise the koji will be inactivated and the rice wine will fail. Pour the koji into a clean container and add clean cold boiled water, about 100 ml. If there is more water, the wine will be stronger and the taste will be relatively lighter, and you can adjust the strength according to personal preference.

5. Mix well, put it in a clean container, poke a hole in the middle with your index finger to observe the wine. The container must be clean, oil-free and salt-free, otherwise bacteria will grow and the taste and color will be wrong.

6. Put it into the rice wine machine and press the rice wine button. Rice wine can usually be made in 24-36 hours. In summer, when the temperature is high, the wine can be made in 24 hours. The photos of this rice wine were taken in April when the temperature was still low. A rice wine machine was used. Now it is May and the temperature is 26-36, so there is no need for a rice wine machine and it can be fermented directly at room temperature.

8. Take a sip, the wine has a strong aroma. Because I often mix two kinds of yeast together, the wine tastes stronger.

9. If you can’t finish the rice wine at once, you can put it in the refrigerator, but it’s best to finish it within a week, otherwise it will over-ferment and turn into vinegar! The most important thing is to use a clean spoon to scoop it into a bowl every time you eat it. If you eat it directly from the fermentation container, the rice wine will change its taste quickly. Rice wine can be used to cook small dumplings, which becomes a dessert. You can also boil rice wine with water, add wolfberry and sugar, and beat eggs in. It is good for women.
