1. Wash and cut the fresh squid into pieces and drain.

9. Bring a large pot of water to a boil, add the squid, blanch for ten seconds, drain and set aside (the squid will shrink a lot after frying, so 500 grams is not a lot. If there are many people in your family or they have big appetites, 1000 grams is not a lot).

10. Boil the enoki mushrooms, chicken wings, potatoes, crab sticks, tofu and beef balls in water until cooked (in fact, they are fried in oil in restaurants outside. In fact, the taste of fried food is indeed better, but after all, living conditions are better now, and everyone is over-nourished, so it is still healthier to choose to blanch them in water, and they are also delicious. 11. Heat the pan with cold oil. Use more oil than usual for cooking. After the oil starts to smoke, add ginger, onion, garlic, peppercorns and dried chilies. After frying until fragrant, add chicken wings and stir-fry. When they are almost cooked, add onions and celery and stir-fry until cooked.

12. After the chicken wings are cooked, add other ingredients and stir-fry together. Turn down the heat, add all the seasonings and stir-fry evenly. After stir-frying evenly, turn to high heat and stir-fry for 30 seconds and remove from the pan. The cilantro on the side is both decorative and delicious. Sprinkle some sesame seeds and serve. Generally, white sesame seeds are used more in cooking, but my family mixes black and white sesame seeds, so they look a little worse.
