1. Prepare oil, sugar, light soy sauce, dark soy sauce, oyster sauce, and chopped green onions.

2. Wash the green onions and cut them into sections. Only the green part is needed, and the white part can be reserved for other uses.

3. Stir-fry until the scallions become crispy and black in color. This process takes different amounts of time depending on the amount of onions. Be patient and observe. I stir-fried it for about ten minutes. Remove the scallion segments and set aside.

4. Add oil to a hot pan and simmer until it is 50% to 60% hot. When you can feel the heat by placing your hand above the pan, add the scallion slices and stir-fry over low heat.

5. Mix light soy sauce, dark soy sauce and oyster sauce together, then pour them into the pot and mix well with scallion oil, and continue heating over low heat.

6. When many large bubbles appear in the pot, pour in white sugar and stir in circles to make the sugar completely melted, then turn off the heat.

7. Put the scallion oil and scallion segments in a container, let it cool and refrigerate. You can take it out and mix it with noodles anytime you want.

8. Cook the noodles in boiling water, drain and place in a bowl.

9. Mix two tablespoons of scallion oil sauce with the noodles and add crispy scallion segments. It is so delicious!
