How to make Matcha Pastry

5. Make the shortcrust dough: Add 2g of matcha powder and 30g of lard to 60g of low-gluten flour, mix well and wrap with plastic wrap. Let both doughs relax for 20 minutes.

9. Take a dough and roll it out with a rolling pin (here you will find the effect of the glove film you kneaded earlier: the rolled skin will not break. If it breaks, the finished product will be broken, affecting the appearance)

10. Roll it up and cover with plastic wrap and let it relax for 20 minutes

11. After taking it out, place it vertically and flatten it with your hands. Use a rolling pin to roll it out.

12. This time, try to roll it into a rectangular shape, so that the layers of the pastry will be more even and beautiful.

13. Roll it up, cover it with plastic wrap and let it relax for 20 minutes

14. Now you can prepare the red bean paste filling, 8 pieces in total, 20 grams each, weigh them and set aside

15. Take out the dough and cut it in half in the middle with a knife (it is best to choose a sharper knife)

18. Flatten it and spread it out (remember to use the back of the spread out dough to wrap the filling, otherwise you will find that the layers of the puff pastry are wrapped inside and become dark puff pastry)

19. Put the red bean paste filling in the wrapper and close it with the top facing down.

20. After wrapping everything, place it on a baking tray lined with baking paper, preheat the oven to 180 degrees and bake for 30 minutes

21. Take it out of the oven and let it cool before eating! (Here is an example: the second one on the top row, which is what I mentioned earlier that you must roll the dough before wrapping the filling, otherwise it will be like this without any layers, you can compare it)
