How to make homemade oil-splashed noodles

The busy life makes many people be careless in their diet, and they deal with their three meals a day casually. Little do they know that this can easily lead to a sub-healthy state of the body. In fact, the homemade oil-splashed noodles are simple and delicious. It is a recommended home-cooked dish that you may as well eat often.

1. Add a spoonful of salt to the flour and knead it into a dough that is slightly harder than dumpling dough. Add sugar and fry for one hour, kneading it two or three times in between.

2. Then roll the dough into small pieces and then roll it into long strips.

3. After rolling, place them on a flat plate and apply a little oil in the middle of each piece to prevent sticking.

4. Then cover with plastic wrap and sugar for about two hours.

5. After the dough is ready, take out a piece of dough and stretch it outwards with both ends of the dough in your hands.

6. The length and thickness of the stretched noodles can be determined according to your preference.

7. Stretch one and put it in the pot. After stretching, cook it for about one minute.

8. Put chopped green onions and minced garlic in a bowl, then add salt, light soy sauce, vinegar and a little chicken essence.

9. Add the fried mung bean sprouts.

10. Let the cooked noodles cool down and put them in a bowl. Top them with chili powder, sesame seeds and crushed Sichuan peppercorns, and then top with the blanched vegetables.

11. Heat rapeseed oil in a wok, add vegetables, onion, ginger, peppercorns and star anise, sauté until fragrant and remove from the pan.

12. Finally, pour it on the chili peppers and peppercorns.
