1. Prepare the ingredients. Cook the rice in advance and dice the chicken, potatoes, carrots and onions.

4. Add water to cover the ingredients in the pot and bring to a boil over high heat.

8. Pour in the cooked rice and stir-fry quickly until coated with the soup.

9. Pour into a container. I used an eight-inch pizza pan and a large bowl.

10. Spread the mozzarella cheese evenly on top.

11. Preheat the oven to 190 degrees and bake on the middle layer for fifteen to twenty minutes.

12. Take out and eat while hot.
