1. Soak the prawns in clean water

3. Add a little salt, rice wine, pepper and ginger and marinate for 10 minutes

4. Add flour and starch

8. Fry the shrimp until golden brown and drain.

9. Put it in the plate, the color will lighten

10. Remove the scum from the oil pan, put the shrimp pieces back into the pan and fry them for a second time until they turn golden brown.

11. Serve on a plate and add some coriander.
