How to make passion fruit mousse

1. Melt the butter in hot water

2. Mix with the crushed biscuits, pour into a 6-inch removable bottom mold, and compact.

3. Add 70 grams of pure water to 7 grams of gelatin powder, dissolve it fully and put it in the refrigerator for later use. Add 20g sugar and 80g passion fruit to the egg yolk and mix well. Add 20g sugar to the milk and boil it on low heat. Slowly pour it into the egg yolk and mix well. Pour it back to boil. Filter out the passion fruit. Let it cool until it is not hot to the touch. Pour in the dissolved gelatin and mix well for later use.

4. Refrigerate 400ml of whipped cream and whip it directly to 70%. The whipped cream must be refrigerated to make it easier to whip. Then pour in the prepared passion fruit milk, mix well by cutting and turning, pour into the upper layer of the mold biscuits, and put in the refrigerator to freeze for 1.5 hours (I put it in the 4 degree preservation layer, the time required is shorter)

5. Add 3 grams of gelatin powder and 30 ml of pure water, stir evenly and put in the refrigerator. Add 10 grams of sugar and 30 grams of passion fruit to 30 grams of water and boil. After cooling, pour in the dissolved gelatin and stir evenly. When it is basically cool, pour it into the upper layer of the mold mousse and put it in the refrigerator for 4 hours.

6. After taking it out, place a handleless cup under the mold and blow the mold around with a hair dryer for about 30 seconds to demould it.

7. When cutting, the knife needs to be dipped in hot water to make the cut surface smooth
