Four Substances Soup

Ingredients: appropriate amounts of cooked rehmannia, angelica, spare ribs, Chuanxiong, white peony root and salt.

Method: Wash the ribs, cut into pieces and blanch them in boiling water. Then wash white peony root, Chuanxiong, Rehmannia root and Angelica sinensis and set aside. In a pot, add appropriate amount of water and all the ingredients. Bring to a boil over high heat, then simmer over low heat for about 1 hour. Then add appropriate amount of salt and you can eat it.

Angelica and Red Dates Pork Ribs Soup

Ingredients: 1 spare rib, 50 grams of angelica, 1 handful of red dates, appropriate amounts of wolfberry, astragalus, and longan.

Method: Soak the ribs in clean water for half an hour, rinse and blanch with water added with cooking wine and ginger slices. Slice the ginger, cut the green onion into sections, and wash the other ingredients with clean water. Add enough water to the soup pot at once, put in the ribs and bring to a boil over high heat. After removing the floating residue, add angelica, red dates, wolfberry, astragalus, longan and rice wine. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours until the ribs are tender.

Wonton Duck Soup

Ingredients: 20 pork wontons, 1 duck, sesame oil, MSG, ginger slices, scallions, salt, and rice wine in appropriate amounts.

Method: Clean the duck, blanch it in boiling water, take it out, wash it and set aside, and cook the wontons and set aside. Take a bamboo mat, place it at the bottom of the pot, put the duck on it, pour water to cover the duck, add rice wine, ginger, and green onion, bring to a boil over high heat, skim off the foam, and then cover with a lid. Simmer over low heat for 2 hours. When the duck is tender, turn it over so that its breast is facing up. Add salt and MSG and boil again. Add the cooked wontons to the pot with the duck and drizzle with sesame oil.
