4. Heat the pan and pour in sesame oil. Don’t add too much oil because the pig intestines will release a lot of oil when stir-fried.

5. When the oil is 60% hot, pour in an appropriate amount of red oil and Pixian bean paste and stir-fry until fragrant. Then add peppercorns, ginger, garlic cloves, and dried red peppers in turn.

6. When the spices are sautéed, pour in the chopped pork intestines, add appropriate amount of salt, chicken essence, star anise and cardamom, and stir-fry over high heat for a few minutes. The purpose is to stir-fry some of the fat intestines' oil, and the salt can also flavor the intestines. Don't worry if it gets dry at this point, because it will return to normal when you add water to stew it later.

7. Stir-fry the pig intestines over high heat for about four or five minutes, then add boiling water.

8. Add potatoes and fungus, add appropriate amount of salt, and bring to a boil.

9. Bring to a boil and pour into the pressure cooker, cover with lid and simmer over high heat for 15 minutes.

10. Sprinkle with chopped green onions and serve. Haha, my family all said it was delicious.
