1: First cut the lotus root into slices, rinse it with clean water, put it into a pot, add water and cook it, then remove it and set aside.

2: Next, cut the tofu into 2 pieces, and then into triangles (i.e. 1 piece of tofu is cut into 4 triangles), put them into the pan and fry until golden brown and then take them out.

3: Finally, add some oil to the pan and sauté the ginger, then add water, a little brown sugar, 1 tablespoon of light soy sauce, half a tablespoon of dark soy sauce, and a little salt for seasoning (I personally don’t like chicken essence, if you like you can add some). Put the previously cooked lotus root slices and tofu into the pot. Boil the water into juice, add some chopped green onions, and it's ready to serve.
