When we walk on the street, we often see some restaurants with Shaxian snacks hanging on them, and most of these restaurants are full of customers. The more famous snacks in Shaxian generally include wontons, some soups, and mixed noodles are also common. So what soups are there for Shaxian snacks?

1. Wonton

Shaxian flat meat evolved from wonton. Wontons are called differently in different places, for example: "chao shou" in Sichuan, "wonton" in Guangdong, "baomian" in Wuhan, "clear soup" in Jiangxi, "huai jiao" in Jiangsu, "qu qu" in Xinjiang, and so on. There are many kinds of flat meat in the north and south, but most diners think that Shaxian snacks are very famous. Among the dazzling array of delicacies in Shaxian, flat meat is the most popular snack.

2. Mixed noodles

Shaxian mixed noodles is a kind of Shaxian snack, usually paired with Shaxian flat meat. It has the characteristics of strong aroma, bright color, simple ingredients and easy cooking method. The taste is salty and sweet, oily but not greasy. In an ordinary Shaxian snack shop, the basic ingredients include: about 500 grams of noodles, 50 grams of peanut butter, some fresh vegetables, sauerkraut, salt, MSG (chicken essence), sesame oil, vinegar, and mashed garlic.

3. Steamed Dumplings

The first thing that attracts people to Shaxian steamed dumplings is that they are very small. People in Shaxian generally call it "rat dumplings" and some call it "willow leaf dumplings". The dumplings are small in shape and can be eaten one in one bite. In addition to its distinctive appearance, the most important thing about steamed dumplings is that they have thin skin, large fillings, and are juicy and delicious. It is very delicious when dipped in vinegar, and its appearance has a strong local flavor.

4. Shaomai

Shaxian's siomai originated in the Song and Yuan dynasties. The Song Dynasty vernacular novel "Quick-Tongued Li Cui Lian" records: "How difficult is it to make shaomai and flat dumplings? I can also make them with three soups and two cuts." Shaxian shaomai originated from Taiyuan, Shanxi Province. It was called "Shaomei" in ancient times because the wrinkles at the opening resemble plum blossoms, hence the name. Later, the maker moved to Shaxian County, and the dish has been passed down to this day. It was later called siomai (shaomai) due to phonetic changes.

5. Rice noodles

Sha County is a grain-producing area. There are many snacks made with rice, which can be roughly divided into two categories. One is to cook the rice into rice first and then make the finished product into glutinous rice cake; the second is to grind the rice into pulp and then make it into food through processes such as frying, steaming and boiling. This type of snack mainly includes fried glutinous rice cake, rice jelly, loach vermicelli, pot-side paste, etc. They are colorful, fragrant and delicious, making people salivate and whet their appetite.
