How to make mooncakes with purple sweet potato, walnut and red bean paste filling

The method of making purple sweet potato, walnut and red bean paste mooncakes is very simple. The ingredients needed are very common. It is a very delicious home-cooked dish. 1. Prepare all the ingredients, low-gluten flour, invert sugar syrup, corn oil, salt, soap water, eggs, prepared purple sweet potato filling, purple sweet potato walnut filling and red bean paste filling, each filling is 30 grams

2. Put soap water, invert sugar syrup, corn oil and salt in a large bowl and mix well.

3. Pour in the sifted low-gluten flour and continue stirring

4. Knead into dough

5. Cover with plastic wrap and let stand for 1 hour

6. Roll the dough into balls of similar size, about 20 grams (I rely on my hands over the years, it is best to use an electronic scale)

8. Take a walnut purple potato stuffing ball and put it on the skin. Prepare a 50g mold.

9. After wrapping the filling, roll it into a ball (I can’t take pictures during this process)

10. Put the prepared mooncake ball into the mold and press the bottom as shown.

11. Turn the mold over and push it onto the plate. As shown in the picture, a mooncake is ready. Preheat the oven to 170 degrees.

12. Prepare all the raw dough in turn, place them on a baking tray lined with baking paper, and spray some mist water on the mooncake raw dough.

13. Place the baking tray in the middle layer, bake at 170 degrees for 5 minutes to set.

14. Beat the eggs in a bowl and mix well.

15. After five minutes, brush the mooncakes with egg liquid, a little bit, and continue to bake at 170 degrees for 10 minutes.

16. The mooncakes after 10 minutes are as shown in the picture. Brush with egg liquid again and continue to bake for another 10 minutes.

17. When the time is up, the mooncakes are baked and the finished product is placed on a plate. At this time, the mooncakes are very hard. They will become softer and taste better after the oil is absorbed.
