How to make old-fashioned mooncakes in Northeast China

The method of making old-fashioned Northeastern mooncakes is very simple, and the ingredients are relatively common in our lives. The price is cheap, and it is a frequent guest on many family tables.

1. Stir syrup, soybean oil, water and sugar until the sugar is completely dissolved (I forgot to take a photo, so I’ll use the filling picture instead)

2. Sift the flour and starter into step 1 and knead into dough

3. Let stand for half an hour (cover with plastic wrap)

4. Divide the filling into 40g small balls (I used a 75g mold) and divide the dough into 35g balls (use a 100g mold, 50g each of filling and dough)

5. Flatten the dough and carefully wrap the filling in it, then press it into a mooncake in the mold.

6. Preheat the oven to 180 degrees

7.7. Put the mooncakes in the oven and bake for 5 minutes. Take them out and brush them with egg yolk. Bake for another 5 minutes. Brush them with egg yolk again and bake for another 7-10 minutes. The specific time depends on different ovens.

8. The baked mooncakes are relatively hard and not suitable for immediate eating. Cover them tightly and store them for 3 days to allow the oil to absorb. They will then become soft and delicious!
