How to make grilled pork ribs

1. Pickled. Spread the pork chops evenly with black pepper, crushed chili, crushed bay leaves, garlic powder and a large amount of sea salt. Cover with plastic wrap and refrigerate to marinate overnight, 12-18 hours.

2. Wrap the pork chops with tin foil and bake in the upper-middle layer of the oven at 150C for 2-2.5h. Low temperature baking ensures juicy pork chops.

3. Remove the tin foil and pour the gravy into a small pot, mix the tomato sauce, apricot jam and lemon juice, mix evenly, bring to a boil over high heat, collect the sauce until it becomes thick, spread it evenly on the surface of the pork chops, set the oven to Broil mode, set the temperature to the highest, put the meaty side up into the oven and roast at high temperature for 10 minutes, turn it over and roast for another 7 minutes (until both sides are browned).

4. It’s good to have it at this stage, it should be burnt but not fuzzy.
