16. Beat the egg yolks, add milk, sugar and cream and mix until all the sugar is dissolved.

17. Filter the tartar water. If you want it to be finer, filter it twice more.

18. Preheat the oven to 190 degrees for 10 minutes.

19. Add the tart mixture into the tart shell until it is 80% full. I also added purple sweet potatoes, you can add a little bit of whatever flavor you want.

20. Place the egg tarts in the middle layer of the oven and bake at 190 degrees for 25 minutes.
