Lentils are also known as mung beans, Emei beans, sheep's eye beans, tea beans, etc. They are cultivated in all parts of my country. Their young pods are oblong, broad and thick, like a crescent, flat and slightly curved. There are many ways to cook lentils, and their main purpose is to better absorb the nutrients in them. Here is how to cook lentils.

1. Remove the two ends of the lentils and wash them clean;

2. Bring water to a boil and blanch the lentils;

3. Add half a spoon of cooking oil;

4. After the water boils again, take out the lentils, quickly rinse with cold water, and drain;

5. Heat the pan with cold oil and add lentils;

6. Add about two spoons of seafood sauce;

7. Add a small bowl of boiling water and stir fry continuously before serving.

Tips:

1. To make the lentils tasty, seafood sauce, hot sauce or bean paste are good ways to do it. In this way, you don’t need to add any other seasonings;

2. Add a little water and stir-fry continuously during the dry-frying process, so that the lentils will not taste dry and will be more flavorful.

2. Stir-fried lentils and pork

Main ingredients: appropriate amount of lentils, 1 piece of pork tenderloin, 1 bell pepper

Seasoning: salt, 2 slices of ginger, 2 cloves of garlic, 1 teaspoon of cooking wine, 1 tablespoon of light soy sauce, 1 teaspoon of dark soy sauce, 1/2 teaspoon of oyster sauce, 1 teaspoon of starch, a little sugar

practice:

1. Clean the pork tenderloin and cut it into strips along the texture of the meat. Remove the old tendons from the lentils and cut them into strips diagonally. Cut the ginger into shreds, wash the green pepper and cut it into thin shreds, and cut the garlic into thin slices for later use.

2. Mix the chopped pork with light soy sauce, dark soy sauce, cooking wine, salt (1 gram), sugar, oyster sauce, dry starch and a little vegetable oil, and marinate for about 5 minutes.

3. Pour oil into the pot. When the oil temperature is 50% hot, add the marinated pork shreds. Fry the pork shreds over medium heat until white, then serve.

4. Add oil to the pot again. When the oil temperature reaches 40% hot, add half of the garlic slices and ginger shreds, stir-fry until fragrant. Add the stir-fried bean shreds and stir-fry over medium heat. When the lentil shreds become soft and turn emerald green, pour in light soy sauce, add green pepper shreds and the fried pork shreds, and continue to stir-fry for 1 minute.

5. When the lentil shreds are about to be served, sprinkle with the remaining garlic slices.
