How to make homemade shahefen

Going home and cooking a delicious meal after the hustle and bustle is over is a very romantic and happy thing. You don’t need to prepare too many seasonings, just prepare onions, ginger and garlic. Add a little vinegar for seasoning when serving. This homemade rice noodle with batter is ready to be served.

1. Knead the flour into dough as shown below.

2. Filter the washed batter and let it sit for two hours, then gently drain the water from the batter to leave the remaining milky batter.

3. Use the bowl you usually use for eating at home to pour half a bowl of water into the dough, rub it vigorously to get the milky white paste, pour the paste into another container, add clean water to the dough and wash it again. Repeat this process until only the gluten is left, as shown in the picture below.

4. Put a layer of oil on the plate used for steaming rice noodles and pour a thin layer of batter into it. Put water in the pot and boil it over high heat. Put the plate with batter in it and cover the pot. Steam a pot in about one and a half minutes. Stack the steamed rice noodles one by one.

5. The dough extracts the water and separates the water paste as shown below.

6. When the steamed rice noodles are cool, use a knife to cut them into the same shape as those sold outside, as shown in the picture.

7. Finally, spread out the cut rice noodles. The rice noodles are ready for use.
