Then stir in one direction evenly and clean off the foam on top. It is best to use warm water when pouring the egg liquid. Do not add tap water or hot water. Because there is air in tap water, when the water is boiled, the air is discharged and honeycombs will appear in the egg custard, affecting the quality and taste of the egg custard, and also damaging the nutritional content. Don't use boiling water, otherwise it will become egg drop soup. If you steam it again, the nutrients will be damaged and you may not even get egg custard. It is best to use warm water or cold boiled water to steam the egg custard, which can ensure both the taste and appearance. The amount of water is also very important. Too little water will make the egg custard taste tighter and tougher, while too much water will make it difficult to form and will taste watery. When beating the egg liquid, do not stir it violently. Stirring the egg liquid violently or for a long time before steaming will cause the egg liquid to foam. It is best to beat the egg liquid, add water and then lightly beat and stir.

5. Add seasoning and warm water to the egg mixture, then filter it with a small strainer to remove the tendons.

6. Before steaming, apply a thin layer of sesame oil on the inner wall of the container so that the bowl will not be sticky with eggs and difficult to clean after eating the egg custard.

7. Finally, pour the egg liquid into the container. I poured it too full, so it will be 90% full. Then cover it with a lid or put a plate on it, or you can just steam it without adding anything. When steaming, make sure the water boils and starts to steam, then put the egg liquid into the steamer. Steam over high heat first and then turn to low heat. After about 1 or 2 minutes, you can turn to low heat. Be sure to leave a gap in the lid of the steamer, and don't cover it tightly, so that air can escape while steaming. This way, the steamed egg custard will not have honeycombs and will not taste old. The steaming time is about 10-15 minutes. Record the time after the water in the steamer boils. (If you are not sure, you can use a toothpick to determine whether the egg liquid is cooked). When it is 70% to 80% cooked, add the shrimps and steam them together. After steaming, add chopped green onion and sesame oil and you can eat it.
