How to make rice wine steamed buns at home

Steps to make wine steamed buns

Step 1

Mix flour, baking powder and sugar, dissolve the yeast in a small amount of warm water, add yeast water and fermented glutinous rice to the flour little by little, add water as needed, and knead into a smooth dough. Note: I add water according to my estimation, that is, when the flour is clumping, I add some water. At this time, the dough is a little sticky, don't worry, continue kneading for a while and it will not be sticky, or you can sprinkle a little flour on your hands.

Step 2

Cover the dough with a damp cloth and place in a warm place to rise for 5 minutes. Note: It only takes 5 minutes. This step is just for the dough to rest, not for it to rise. Wake up and it is not conducive to continue the following operation

Step 3

After it has risen, sprinkle powder on the panel and use a rolling pin to form it into a dough sheet, which should be slightly thicker than hand-kneaded dough. Slowly roll it into a tube from the outside to the inside, rubbing it as you roll it. Roll it tightly and don't roll it too loose. (I felt a sense of accomplishment at this step, as the length reached more than 1 meter.) Note: this step is about shaping. The method of rolling the dough into sheets and then rolling it is the same as cutting steamed buns with a knife. You can also use a simpler method, which is to roll it into a cylinder directly, just like making dumplings or buns, and then cut it into pieces. Similarly, in this step, in addition to making steamed buns, you can also make steamed buns, flower rolls, etc.

Step 4

Cut into squares with a knife, cover with a wet cloth or let it rise in a steamer for about 20-30 minutes, then you can steam it. Turn on high heat first, then turn to medium-low heat after the water boils, and steam for 15 minutes. Turn off the heat and simmer for 5 minutes before opening the lid. Okay, the steamed buns are waiting for you! :) Note: cut into squares first, they will automatically become rectangles after proofing. The proofing time should be based on the actual situation, that is, it should be proofed until the buns are slightly larger and do not shrink immediately when pressed by hand.
