Fried rice noodles are a signature dish in many snack bars. The ingredients used are very particular, and you can choose your favorite ones to add in. In addition, what are the seasonings for fried rice noodles? In fact, the seasoning for fried rice noodles is not fixed. You can add it according to your personal taste. If you like spicy food, you can add more chili peppers. If you like sour food, you can add more vinegar. In short, there is no fixed seasoning for fried rice noodles, it depends on personal preference.

Rice noodles are a classic Han Chinese snack and belong to southern Fujian cuisine. It is a dish that is loved by the public. The main ingredient is rice noodles, stir-fried with cabbage and other vegetables.

Fried rice noodles method:

Ingredients preparation

Material:

3 grass shrimps, 2 fried tofu, 20g fish balls, 20g bean sprouts, 1/4 boiled egg, 100g rice noodles, a few shallots, 2 basil leaves, 3 chili slices

Seasoning:

1. 30g dried shrimp, 3 chestnuts, 6 shallots, 4 garlic cloves, 1 small piece of ginger, 1/2 tablespoon of dried lemongrass, 4 red peppers, 2 tablespoons of curry powder, 2 teaspoons of shrimp paste

2. 2 cups chicken soup, 1/2 cup coconut milk, a pinch of salt and pepper

Production steps

1. Use a juicer to blend seasoning 1 into a paste (you can add a little salad oil). Slice the fried tofu and set aside.

2. Heat the pan, add a little oil, stir-fry seasoning 1 until fragrant, then add seasoning 2, turn to medium heat, and stir the soup constantly to avoid burning. After boiling, add grass shrimp, fried tofu slices and fish balls and cook until done. Then add rice noodles and cook together. When done, serve in a bowl.

3. Blanch the bean sprouts until cooked, put them in a bowl, add 1/4 of a boiled egg, and finally sprinkle with shallots, basil and chili flakes.
