Three cup shrimp recipe

The food Three Cups Shrimp is made with one cup of sesame oil, cooking wine and soy sauce. Mixing these three seasonings together can remove the fishy smell of the shrimp and allow the shrimp to absorb the flavors of the three. When making three-cup shrimp, you can choose grass shrimp. After removing the heel whiskers of the grass shrimp, heat the oil to 80%, and then add the processed grass shrimp and three-cup seasoning.

Specifically, it is one cup of sesame oil, one cup of cooking wine, and one cup of soy sauce. The authentic three-cup dish uses Taiwanese black sesame oil, Taiwanese rice wine, and light soy sauce. If you make this dish at home, you can just use ordinary sesame oil and regular rice wine. However, these three cups of seasoning are not equally shared. 2 liang of wine, 2 liang of sesame oil, and 1 liang of soy sauce.

Main ingredients: Grass shrimp or base shrimp

Be sure to choose larger shrimps, otherwise, after the juice is absorbed, the shrimp meat will shrink and become smaller, which will neither look good nor taste good.

Shrimp need their legs and whiskers trimmed. This is done to prevent the shrimp legs and antennae from falling off during the cooking process, which would make it troublesome to eat and affect the mood for eating.

Seasoning: one cup of sesame oil, one cup of cooking wine, one cup of soy sauce (mix the three cups of juice first); onion segments, garlic cloves, ginger slices, red pepper slices, salt, and sugar.

There is another seasoning that is difficult to find in the average home kitchen. That's basil. Basil was originally a wild fern herb, which looks very similar to the bean sprouts we eat every day. When eating, the heat from the pot smokes the main ingredients together, giving it a special flavor. The aroma of delicious food is stimulated by the basil and is unreservedly aroused, appearing so rich and full. It can be said that it is "Basil" that supports Taiwan's "three cups of dishes".

After the pan is heated, heat the oil to 80%.

Add the shrimp and fry until the oil is applied. After about 1 and a half minutes, when the shrimp shell turns red, remove the shrimp.

Add sesame oil and sesame oil, and stir-fry ginger and garlic until golden.

Return the fried shrimp to the pan and stir-fry. Pour three cups of sauce over it.

Add MSG and sugar. Stir-fry until the three cups of juice has almost shrunk, then add basil, red pepper slices, and scallion segments and stir-fry until fragrant. At that time, don't smell it anymore and put it into the casserole quickly. Cover the casserole and pour some rice wine to make the aroma more fragrant. Of course, if you don’t have a small casserole at home, you can just serve it directly on a plate.
