How to make delicious stupid chicken

1. Boiled chicken:

Ingredients: 1 broiler, 8 grams of salt, 5 grams of MSG, 10 grams of green onion, 10 grams of ginger, 15 grams of seasoning, and 3 grams of sesame oil.

Preparation method: 1. Cut open the chicken and take out the internal organs, taking care to remove the lungs stuck to the sternum. Put it in clean water to rinse off the blood, and use the base of a knife to chop the chicken into egg-sized pieces. Cut the green onion into sections and the ginger into cubes.

2 Put the wok on the fire, boil a pot of water, put the chicken pieces in, wait for the surface to shrink, take out, wash in cold water, and remove the dirt on the surface.

3 Put the wok on the fire, add water, put in green onion, ginger, seasoning, salt and MSG, put in the chicken pieces, and cook on low heat after boiling. Cook for about 25-35 minutes until the meat is tender and ready to eat.

2. Stewed Chicken, Potatoes and Enoki Mushrooms

Ingredients: 750g chicken, 500g yellow potatoes, 150g enoki mushrooms

Seasoning: 25g soy sauce, 5g salt, 3g MSG, 4g pepper, 8g green onion, 8g ginger, 20g sugar, 3g star anise, 50g vegetable oil

How to cook stupid chicken stewed with potatoes and enoki mushrooms:

1. Wash the chicken, chop it into pieces, and marinate it in soy sauce for 20 minutes;

2. Peel the potatoes and cut them into dices;

3. Remove the old roots of the enoki mushrooms and wash them;

4. Put the pot on high heat, add vegetable oil, and when it is 70% hot, put the potatoes in and fry until golden brown;

5. Wash and chop the green onion and ginger separately;

6. Continue to heat the vegetable oil until it is 80% to 90% hot, put the chicken pieces in batches and fry until they change color;

7. Place another pot on high heat, add oil and heat it up, stir-fry with chopped green onion and ginger, add 750 grams of broth, soy sauce, salt, pepper water, aniseed, sugar, and put in the chicken pieces;

8. Bring to a boil and simmer over low heat for 25 minutes;

9. Add potato cubes and enoki mushrooms, simmer for another 15 minutes, then add MSG.

3. Recipe ingredients: Sichuan pepper, dried red pepper, chili oil , sesame, cooking wine (or beer), dark soy sauce, salt, sugar

How to make big plate chicken:

1. Cut the raw materials and set aside

2. Heat oil and add ginger, peppercorns, dried red peppers and onions in turn until fragrant;

3. Add the chicken pieces and fry until the water is dry and golden brown. Add some beer, dark soy sauce, and chili oil and stir-fry evenly.

4. Add potatoes and garlic, add salt and stir-fry evenly;

5. Add water in parallel with the vegetables, bring to a boil over high heat, simmer for 20 minutes over low heat, add green and red peppers, add some sugar to enhance the flavor, simmer for 10 minutes over low heat, sprinkle with sesame seeds and serve;

6. Prepare the noodles. It is troublesome to knead the noodles yourself, so it is better to buy wider hand-rolled noodles outside.
