1. Crucian carp and tofu milk-inducing soup

Ingredients: crucian carp (about 150g), tofu 50g, scallion, ginger 5g each, coriander 10g, oil 1 tablespoon (10ml), salt 1 teaspoon (5g), vinegar 1 teaspoon (5ml).

1. Remove the internal organs of the crucian carp and clean it. If the crucian carp is large, cut the fish into 4 cm long segments. Cut tofu into 1cm cubes and chop coriander into small sections.

Ingredients: 300 grams of crucian carp, 15 grams of oil, 5 grams of chopped green onion, 5 grams of ginger, 2 grams of salt, 1 gram of pepper, and a little cooking wine.

2. After heating the pan, first smear the bottom of the pan with ginger slices, so that the fish is not easy to stick to the bottom when frying. Wait until the oil is 70% hot, put the fish in, fry until both sides are golden brown, sprinkle appropriate amount of cooking wine (to remove the fishy smell and make the soup more fragrant), add water (not too much water) and bring to a boil, simmer over medium heat until the soup is thick white, add salt, pepper, and chopped green onion to taste.
