1. Prepare all materials

3. Add milk and mix well

6. Stir quickly and evenly. Do not stir in circles to prevent the flour from forming gluten. Set the evenly stirred cocoa and egg yolk paste aside for later use.

7. Add appropriate amount of salt and 2 drops of white vinegar to the egg whites

Add the granulated sugar in three batches (when the egg whites are beaten into fish-eye bubbles, add 1/3 of the granulated sugar, continue beating until the egg whites begin to thicken and form coarse foam, then add another 1/3 of the sugar, continue beating until the egg whites are thick and lines appear on the surface, then add the remaining 1/3 of the sugar.

9. Beat the egg whites until they are stiff and the whisk should be in a triangle shape.

10. Add the egg whites three times and stir quickly to mix evenly (do not stir to avoid defoaming). Each time you add, you must stir the egg whites and egg yolk paste evenly.

11. Stir evenly the cocoa cake batter

12. Pour into a removable bottom mold and shake it gently to remove the bubbles.

13. Preheat the oven to 135 degrees for 10 minutes, and bake at 135 degrees for 40 minutes (the oven temperature can be adjusted according to the temperament of your own oven)

14. It comes out of the oven after the time is up. It is very full.

15. After it comes out of the oven, shake it a few times and then turn it upside down. After it cools down, it can be easily demoulded.
