What is the method of making this dish?

First of all, the hot pepper should be good. Sichuan Erjin Tiao is more fragrant. If you can eat spicy food, you can use Chaotian pepper or millet pepper.

Then prepare the oil in the ratio of 1:4 between chili and oil. If you are from other places, use blended oil, but don't use peanut oil or soybean oil. Of course, if you like spicy food, you can use less oil, and if you like light food, you can use more oil, but it is recommended not to exceed 1:8, otherwise there will be no taste.

Heat the oil, add a few onions and ginger slices, and fry them until they turn yellow, then remove them from the pan. The main thing is to enjoy their aroma. Turn off the heat and wait for the oil temperature to drop to 50% hot (about 100 degrees, the highest oil temperature seems to be over 300 degrees), pour in the chili powder and stir. Don't stop to avoid it getting burnt. Boil it for a while so that the aroma can be fully brought out, add some cardamom to add some flavor, and wait for the oil to cool down, and the red oil is basically ready.

There are two types of red oil, one of which is this kind of red oil. In addition, in the last process, several spices such as star anise, cardamom, and pepper will be added together with cardamom. This will make the aroma stronger and is better for making cold dishes. I think this will cover up the original aroma of the chili pepper.

Chili pepper has a stimulating effect on the mouth and gastrointestinal tract, can enhance gastrointestinal motility, promote the secretion of digestive juice, improve appetite, and inhibit abnormal fermentation in the intestines. Some medical and nutrition experts in my country conducted a survey in Hunan, Sichuan and other provinces and found that the incidence of gastric ulcers in these provinces, where people generally like to eat chili peppers, is much lower than that in other provinces. This is because chili pepper can stimulate the release of prostaglandin E2 in the human body, which is beneficial to promote the regeneration of gastric mucosa, maintain gastrointestinal cell function, and prevent and treat gastric ulcers.

2. Prevent gallstones

Eating green peppers regularly can prevent gallstones. Green peppers are rich in vitamins, especially vitamin C, which can convert excess cholesterol in the body into bile acid, thereby preventing gallstones. People who already have gallstones can eat more green peppers rich in vitamin C, which can help alleviate the condition.

3. Improve Heart Function

A "health product" is made with chili as the main ingredient, combined with garlic, hawthorn extracts and vitamin E. After consumption, it can improve heart function and promote blood circulation. In addition, eating chili peppers regularly can lower blood lipids, reduce thrombosis, and have a certain preventive effect on cardiovascular diseases.
