How to prepare cod: Cod has few bones, is not fishy, ​​does not require cleaning, and is easy to cook. The only thing to note is that what we usually buy is frozen cod, so it must be thawed. When thawing, be sure to remember to thaw it on a rack so that the water can flow out and the fish meat will not be soaked in water, affecting the taste. After melting, use kitchen paper to absorb the moisture and set aside.

Method 1: Marinate the processed cod with a little white pepper, steamed fish soy sauce, and cooking wine (white wine is best) for fifteen minutes. Bring steamer to boil. Place the ginger and green onion shreds on the fish, pour out the juice from the marinade, add some steamed fish soy sauce, put it in the steamer and steam it over high heat for five or six minutes until it is cooked. While steaming, use another pot, pour some sesame oil, add the peppercorns, and fry them until they turn black. Take out the fish, put fresh shredded ginger on it, then while the oil is hot, carefully skim off the peppercorns and pour the hot oil through the ginger onto the fish.

Method 2: Rub both sides of the cod fillet with salt and pepper powder to make it taste good. Marinate for more than ten minutes, then spread it flat on the bottom of the plate, sprinkle chopped green onion, ginger and garlic on the fish fillets, cut the red and green peppers into shreds and arrange them, finally drizzle some sesame oil. If you prefer, you can also use a little less high-quality soy sauce. After the water in the steamer boils, put the fish plate into the pot and steam it over medium heat for 7 to 8 minutes before serving.

Method three: Add appropriate amounts of cod, pickled mustard tuber, straw mushrooms, red bell pepper, shredded green onion and ginger, coriander, chicken essence, sugar and cooking wine. Put shredded green onion, ginger, straw mushrooms and chopped pickled mustard into the cod, add cooking wine, sugar and chicken essence, mix well and steam for 8 minutes. After removing from the pot, drizzle with olive oil and top with shredded red pepper and coriander.
