1.1 Make a few cuts on the fish's back, on both sides. Apply salt, cooking wine, soy sauce, fermented black bean oil, garlic and ginger on both sides of the fish's back and sprinkle some in the fish's belly. Let it simmer for fifteen minutes. It's okay if it takes a little longer.

2.2 Wash the fish and set aside. Wash the onion, garlic, ginger and chili and cut into small pieces or strips.

3. After it is cooked, you can steam it. When the meat is almost cooked through, add the chili peppers and green onions. Steam it for a few more minutes and it’s ready to serve. Be careful when taking the fish out of the pot, as the hot water will burn you, so add cold water to the bottom of the pot first, then take the fish out of the pot.
