Steamed meat with dried beans is a traditional local specialty of Hunan Province and belongs to the Hunan cuisine. Select the crisp and tender dried beans, remove the insect holes, clean them, and dry them in the sun. Then add salt, rub them evenly, and seal them in a jar. They can be stored for a long time. Dried beans need to be soaked in warm water before cooking. They can be cooked once they are soaked. There are many ways to eat dried beans, such as stir-frying or stewing. No matter how you eat them, they must be paired with meat because dried vegetables can easily absorb the broth and flavor of the meat.

Ingredients: 100 grams of dried beans, 300 grams of fresh pork, and a tablespoon of chili powder.

Seasoning: appropriate amount of oil, salt, a large spoonful of oyster sauce, and a little chicken essence.

Preparation method

1. Cut the pork into thick slices, mix well with salt and oyster sauce and set aside;

2. Soak the dried beans in cold water, then remove and cut into 2-3 cm long segments;

3. Heat oil in a pan, add dried beans and fry until fragrant, sprinkle with chili powder, mix well and serve in a bowl, then cover the marinated pork on the dried beans and pour appropriate amount of water;

4. Put the bowl into the pressure cooker and steam it for half an hour. Sprinkle chicken essence and mix well before eating.

Tips

1. Be sure to use fresh meat. Pork belly or front leg meat with alternating fat and lean meat are both good.

2. In order to allow the dried beans to better absorb the aroma of the meat, place them at the bottom of a bowl and add water to make them easier to evaporate.

3. Adjust the spiciness according to your taste. You can also use minced garlic instead, but the taste will be much lighter.

4. The dried beans are stored in a jar after being made. They will have a light sour taste due to fermentation. They are very delicious when cooked in this way! It goes well with rice!
