Ingredients preparation

1 eggplant, 50g minced pork, appropriate amount of oil, appropriate amount of salt, 30g bean paste, 3 garlic cloves, appropriate amount of onions, 20ml cooking wine, 30ml light soy sauce, 2g white sugar, appropriate amount of starch, appropriate amount of ginger.

Method steps

1. Wash the eggplant, cut it into small pieces, add a little salt and marinate for a while.

2. Wash the pork and cut it into minced meat; wash the onion, ginger and garlic and cut them into minced meat.

3. Add cooking wine, white sugar and light soy sauce to the minced meat, and mix well with your hands.

4. Pour oil into the wok, heat it, then add the eggplant and stir-fry.

5. After the eggplant becomes soft, remove from the pan, add a little oil, add the bean paste, and stir-fry until fragrant.

6. Then add chopped onion, ginger and garlic, stir-fry until fragrant, add minced meat, stir-fry, add cooking wine and stir-fry until fragrant.

7. Pour the eggplant in and continue to stir-fry. Add light soy sauce, white sugar and a little salt and continue to stir-fry.

8. Then pour in a little water starch, stir-fry the eggplant evenly, turn off the heat, put it on a plate, and sprinkle with chopped green onions.
