How to make Mapo Shrimp

1. Add soy sauce, rice wine and starch to minced pork and mix well.

2. Remove the head, shell and shrimp thread of the fresh shrimp, make a cut on the back, add 1 spoon of cooking wine and 1 spoon of starch to the shrimp and mix well. Pour oil into a frying pan, add shrimps when the oil is hot, and stir-fry over medium heat until they change color. Remove from the pan and set aside. (You can also blanch it, depending on your personal preference)

3. Heat the pan and add oil. After the oil is hot, add the minced meat and stir-fry until it changes color. Then add the bean paste and minced garlic and slowly stir-fry until the red oil is red!

4. Add seasoning and bring to a boil, then add shrimp and stir-fry evenly, then add water starch to thicken, and you can serve!

Cooking Tips

PS: If you like spicy food, just add some chili powder. The bean paste itself is salty, so there is no need to add salt. If you prefer a stronger taste, adjust the amount according to your own taste.

How to make Mapo Tofu Shrimp

1. Bring a pot of water to a boil, put the tofu in the water, blanch it briefly and then take it out. The blanched tofu is not easy to fall apart and is more refreshing

2. Pour oil into the pan, put the peppercorns in the oil, pick them up after the aroma comes out, then add the minced garlic and ginger and stir-fry until fragrant, then pour in the bean paste and stir-fry until fragrant

3. Remove the heads, shells and shrimp threads of the fresh shrimps. Add shredded ginger, cooking wine and water starch in advance, mix well and let marinate for 5 minutes. After the bean paste is fried in the pot, pour in the shrimp and stir-fry until it changes color.

4. Add a large bowl of water, bring to a boil over high heat, pour in the blanched tofu, simmer for 5 minutes over low heat until the sauce thickens, and add a spoonful of oyster sauce before serving

Cooking Tips

1. After blanching the tofu, it will not fall apart easily and will taste better.

2. After the Sichuan peppercorns have become fragrant, remove them and discard them, otherwise they will become bitter if you continue to stir-fry them in the oil.

3. The removed shrimp heads can also be used to make shrimp head oil or shrimp head seaweed soup, or they are also good for cooking noodles.

4. The oyster sauce before serving is entirely up to you, and you can also add sesame oil to enhance the flavor.

5. Because the bean paste is already seasoned, there is no need to add salt to this dish.
