​How to twist a flower roll correctly?

When making flower rolls, many friends probably struggle with the twisting part, because if it is not twisted well, the appearance will be affected after steaming. Twisting a flower roll requires experience and skills. You may not be familiar with it when you first learn it, but you will understand the technique after twisting more flower rolls.

How to twist the flower roll

Ingredients: 300g flour, 3g yeast, 180g milk

Accessories: 1.5 tablespoons oil, 1/2 teaspoon salt, 50 grams chopped green onion

1. Mix the yeast and milk evenly, add the flour, knead into a smooth and soft dough, cover with plastic wrap, and ferment in a warm place until it doubles in size.

2. Take out the dough, sprinkle it with a thin layer of flour, knead the dough thoroughly for about 10 minutes, remove excess bubbles, roll it into a round shape, cover it with sugar and let it rise for 15 minutes.

3. Roll the dough evenly into a rectangular shape with a thickness of about 5mm.

(When making flower rolls, it is not good to roll the dough too thin or too thick. If it is too thin, the subsequent sugar fermentation of the flower rolls will be affected by the oil immersion, and the finished product will have hot dough lumps that cannot be fermented. If it is too thick, the layers are not beautiful and the taste is not good. Generally, the thickness of the dough should be about 0.5cm.)

4. Pour oil on it, spread it evenly, sprinkle salt evenly, spread it evenly.

5. Sprinkle chopped green onion evenly and roll up from one end

6. Cut evenly into pieces about 3 cm long

7. Take one section, pinch both ends with both hands, and gently stretch it a little

(If the divided pieces are too small, you can stack them two together for subsequent shaping operations.)

8. Twist your hands about 180 degrees in opposite directions, wrap around the bottom and pinch together

9. Finish the other steps, place the mat on the tray, and let the sugar rise for 15 minutes.

10. Steam over medium heat for about 13 minutes after the steam comes up, turn off the heat, and boil after 5 minutes.
