1. First, knead the ingredients for the medium dough into dough, until it is basically smooth, and let it ferment to twice its size! You can use a bread machine to ferment it, or you can knead it a day in advance and put it in the refrigerator to ferment, but that will take a longer time, about 15 hours! 2.12 Divide the fermented dough into small pieces and tear them apart with your hands! Then add all the main dough ingredients (the butter should be made using the post-oil method), knead the dough once and then ferment it once in the bread machine! That is to knead out the film! Fermented to twice its size!

3.21 Degas the fermented dough, divide it into small doughs of about 60g, and roll them into balls! Arrange in a baking pan and let rise until doubled in size! Put a bowl of boiling water in the oven, put in the baking tray, and ferment.

4. The noodles are soft and fluffy after the second fermentation! Brush the surface with egg yolk and sprinkle with sesame seeds! Preheat the oven to 180 degrees

5. Put the oven into the oven and adjust the temperature to 165 for low heat and 170 for high heat. 16-20 minutes! Do not take out the boiled water used for fermentation, keep it in the oven to increase the humidity

6. Observe the coloring carefully and cover with tin foil as soon as you reach a satisfactory color! Otherwise you will become a black baby! Bake for about ten minutes, then take out the baking tray and change the direction of baking to ensure even color! I usually cover with tin foil after twelve minutes!

7. OK, take it out and put it in a bag when it is almost cool, but don’t let it cool completely.
