How to make Sichuan style braised chicken

In life, many people like to eat braised chicken, and the nutritional value of braised chicken is particularly high. When stewing braised chicken, you can also add a lot of side dishes, and the braised time must be longer, so that the soup can enter the chicken. If you like spicy food, you can also add some peppers. The braised chicken soup is also great for mixing with rice. Here is an introduction to the method of Sichuan braised chicken.

Method 1

Ingredients:

700g three-yellow chicken, 50g black fungus, 50g shiitake mushrooms, 100g bamboo shoots, onions, ginger, star anise, cinnamon, dried chili peppers, cooking wine, pepper powder

step:

1. Prepare the three yellow chicken, bamboo shoots, mushrooms and black fungus.

2. Chop the three-yellow chicken into small pieces and rinse off the blood with clean water.

3. Marinate the chicken pieces with salt, cooking wine and pepper.

4. Prepare star anise, cinnamon, bay leaves and chili.

5. Cut the green onion into sections and the ginger into slices.

6. After soaking the fungus in warm water, remove the stems, wash it clean, tear it into equal-sized pieces with your hands, drain the water and set aside.

7. Wash the bamboo shoots and cut into dice.

8. Wash the dried mushrooms, soak them in warm water, remove the stems, drain and set aside. Do not pour out the water used to soak the mushrooms, set it aside to settle.

9. Add oil to the pan and stir-fry seasonings.

10. Add the marinated chicken pieces and stir-fry until they change color.

11. Add soy sauce and sugar and fry the chicken until it is colored and fragrant.

12. Pour in the water used to soak the mushrooms. Bring to a boil, then simmer over low heat for 10 minutes.

13. Add bamboo shoots, mushrooms, fungus and salt, bring to a boil over high heat, cover and simmer over low heat for 30 minutes.

14. Add thin starch and cook until the soup completely coats the ingredients.

 

Method 2

Ingredients:

500g chicken, 200g mushrooms, 100g green pepper, 100g red pepper

step:

Step 1: Cut the chicken into pieces and wash it. Add appropriate amount of scallion segments, ginger slices and a spoonful of salt, mix well with the chicken pieces and marinate. Leave it for 15-20 minutes!

Step 2: After 15-20 minutes, pick out the meat pieces individually.

Step 3: Chop the dried chili peppers, garlic and ginger

Step 4: Pour oil into the pan, bring it to a boil, then add dried chili peppers, ginger and garlic, and when you smell the aroma, add the chicken and stir fry.

Step 5: While stir-frying the chicken, add seasoning (salt, sugar, sauce), then add water, pour in the chopped mushrooms, turn to low heat, and simmer the chicken and mushrooms.

Step 6: Cut the green and red peppers and set aside. Simmer for about 15 minutes and then add the green and red peppers.

Step 7: After pouring in the red and green peppers, simmer over low heat for a few minutes. It will be ready to serve in about 10 minutes.
