1. Remove the head and tail of the grass carp, slice it into fish fillets, add appropriate amount of salt and cooking wine, mix well

3. Add appropriate amount of starch to lock in nutrients and prevent loss, and also make the meat smooth and tender.

4. The paste should be slightly thicker and not flow.

6. Fry until golden brown

7. Continue to heat the oil to 80% hot, and quickly add more oil to the pan. Be quick, it will only take a few seconds. If you add more oil for too long, the meat inside will dry out!

8. Leave a little oil in the pan, add the chopped onion, ginger, and garlic, fry until fragrant, then add a little dried chili (depending on your personal taste)

9. Stir-fry the pepper until fragrant, then add the ingredients

10. Stir-fry for a few times, then add cooking wine and vinegar. It is better to add vinegar at this time to determine the sour taste, so as to avoid adding too much or too little at the end, which will affect the taste of the dish

11. Pour in the fried fish pieces

12. Pour boiling water in, just enough to cover the fish pieces. Do not add more water during the stew. Add a little dark soy sauce to adjust the color. Add a little pepper after the water boils.

13. Stew for about five minutes until the vermicelli is transparent.

14. This dish is hot and sour, the meat is delicious and the soup is tasty.
