1. Buy the Shuidong mustard greens, peel them one by one along the leaves, wash them clean, put them in clean water with a little salt and soak them for 15 minutes, then cut them into small pieces for later use.

2.1 Pour a small bowl of water into a wok, turn on low heat, pour in oyster sauce, spread it evenly with a spoon, add a little water starch to make a thin starch, turn off the water after boiling, and add a little salad oil or sesame oil to make a layer of oil on the starch sauce, so that the starch sauce has a glossy texture.

3.2 Bring the water in the pot to a boil, put the chopped mustard greens into the water and blanch for 3 minutes. Remember to add a little oil and salt during the blanching process, which will make the green color of the vegetables more obvious. After blanching for 3 minutes, scoop out the mustard greens and place them on a plate.

4. Pour the cooked oyster sauce over the cooked mustard greens.
