Spicy dry-fried rabbit

5.2 Marinate for half an hour.

6. Heat the pan with cold oil. When the oil reaches 40% hot, turn to low heat and pour in all the seasonings except the dried chili peppers.

7. Stir-fry slowly over low heat. When the seasoning becomes fragrant, add the diced rabbit meat.

8. Turn to high heat and stir-fry quickly until the meat turns white.

9. Add appropriate amounts of light soy sauce (for flavor) and dark soy sauce (for color), and two pieces of rock sugar to enhance flavor and color.

10.1 Add dried chili segments.

11.2 A spoonful of salt. Since the rabbit meat has been seasoned before, please add salt according to your taste.

12. Continue to stir-fry over low heat. Keep frying until the moisture of the rabbit meat is basically dried up and only oil is left in the pan. Remember, do not add water during this process.

13. Take two pieces of pickled ginger from the kimchi jar, wash them and drain them.

14. When the diced rabbit meat is stir-fried until dry and fragrant, you can pour in the pickled ginger that has been cut into small slices.

15. Stir-fry together. This process does not need to be too long, 2 or 3 minutes is enough.

16. Add a spoonful of MSG and stir well. The dry-fried rabbit cubes that are dry, fragrant, crispy and tender can be served on a plate.
