How to make Golden Pig Glutinous Rice

1. Ingredients: 100 grams of pumpkin, 180 grams of glutinous rice flour, 35 grams of corn starch, 10 grams of coconut flakes, 80 grams of cooked bean paste, 2 grams of matcha powder, and appropriate amounts of sugar, water, and salad oil (I didn’t use sugar because the bean paste is sweet).

2. Peel the pumpkin and cut into pieces.

3. Steam in a steamer until cooked.

4. Mash or puree the pumpkin and pour it into a bowl.

5. Mix 150g glutinous rice flour and 30g corn starch evenly, add to the hot pumpkin puree, stir and let cool slightly.

Mix 6.30 grams of glutinous rice flour, 5 grams of corn starch and 2 grams of matcha powder evenly.

7. Add hot water and stir until it becomes snow-like and let cool slightly.

8. Mix the two kinds of dough into smooth pumpkin glutinous rice flour and matcha flour dough.

9. Shape the pumpkin dough into small pieces of the same size, shape the red bean paste into balls smaller than the pumpkin balls, and shape the matcha dough into pieces as big as peanuts.

10. Put some oil on your hands, press the pumpkin ball into a round cake, wrap it with red bean paste, close the top and roll it into a smooth ball shape, and place it on a board.

11. Take the matcha dough and shape it into triangles for pig ears, circles for eyes, and ovals for mouths.

12. Use a toothpick to press out the eyes, and then press black sesame seeds on them to make the eyeballs.

13. Use a toothpick to press out the pig’s nostrils and the pig is ready.

14. Use the prepared glutinous rice dough and the extra matcha dough to make a matcha-colored pig, which can serve as a team leader!

15. Apply a thin layer of oil on the rice wrapper (or directly on the steamer), put in the glutinous rice dough and cover it.

16. Steam for 5-8 minutes, then turn off the heat and cover for 2 minutes before serving.

17. Roll a layer of shredded coconut on the bottom of the steamed Golden Pig Glutinous Rice Cake while it’s still hot and the glutinous rice cake is ready.

18. The finished product is elastic, smooth, colorful and lifelike.
