Fermentation

Knead the dough (I use a bread machine to knead it, and you can take it out when you see that there is almost no dry powder. This is not making bread, so there is no need to make film or anything). The dough is very sticky when you take it out, so you need to put some dry powder on the chopping board. Knead it a few times to shape it, cover it with plastic wrap and let it ferment. Use the oven's fermentation function for about 40 minutes.

Prepare the puff pastry

While fermenting, prepare the pastry, 20 grams of soybean oil and 55 grams of medium-gluten flour. Heat a wok over high heat, then turn to low heat. Add the oil and noodles from step 3 into the wok and keep stir-frying until the color of peanut butter appears. Turn off the heat and serve immediately. Do not leave it in the wok. The residual heat from the wok will cause the pastry to quickly become mushy. When the time is up and the noodles are fermented, sprinkle dry powder evenly on the chopping board and begin to shape it into a small rectangle. This shape of dough hammer is easier to operate. Then stretch the dough to the left, then to the right, until it becomes a long strip. Stretch it up and down again, and finally make it into a large dough sheet about the same size as the kneading pad. Then prepare the other part of the shortcrust pastry, 75 grams of soybean oil, 75 grams of medium-gluten flour, 7.5 grams of salt, add the part just fried, mix into the shortcrust pastry to be put in the sesame seed cake. Spread the pastry evenly with a plastic scraper, roll it up from top to bottom, sprinkle with dry flour, and divide it into eight portions. Pinch the two ends of the dough slightly, buckle the two ends to the middle part of the dough, turn it upside down and press slightly to form a small round dough.

Pancake

Start from the top quarter, stop at the bottom quarter, rotate, and repeat this action, finally forming a square with slightly thicker sides. Carry the four corners of the plate. At this time, you can set the oven to 250 degrees and start preheating. Then prepare 35 grams of soybean oil and one egg yolk, mix well, and brush them on the surface of the sesame cake. Bake at 250 degrees for 8 minutes. The look of it during baking.
