1. On the first night, add water, salt, flour, and yeast into the bread machine, knead the dough into a smooth dough, roll it into a ball, put it into a container, cover it with plastic wrap, let it stand at room temperature for 1-2 hours, and then refrigerate overnight.

2.1 Flatten the dough with your hands to expel air bubbles, fold the dough inwards and squeeze out the air with your hands; then knead it until the surface is smooth, put it into a rattan basket with the top facing up and press it lightly a few times (please sift an appropriate amount of rye flour on the rattan basket in advance)

3.2 On the next day, take out the fermented dough from the previous night, tear it into small pieces and put it into the bread machine. Put the ingredients for making bread into the bread machine in the order of adding water, then salt, then flour, and then yeast. Knead the dough once, and then take out the dough after the fermentation process is completed [the picture shows the state of the fermented dough on the second day]

4. Cover with cloth or plastic wrap and let rise in a warm and humid place until it doubles in size.

5. Carefully turn over the basket and take out the bread, and place it on a baking tray lined with baking paper.

6. Preheat the oven to 230 degrees, place a pot of hot water on the bottom layer and place the bread on the middle layer for about 30 minutes until the bread is golden brown. (The original recipe says 40-50 minutes, the specific time will depend on the state of the bread)
