How to make walnut crispy buns

1. Put all the ingredients in A into the bread machine in the order of liquid first and solid later, and stir until smooth.

3. Now to make the pastry batter: soften the unsalted butter at room temperature

7. Sift in flour

8. Use a leather spatula to mix well

9. Put it into a piping bag for later use (I am too lazy to wash the piping bag, so I use a fresh-keeping bag instead). If the temperature is high or the time is long, you can put it in the refrigerator first.

10. After the dough has fermented to 2 to 2.5 times its original size, take it out and gently press it to release the air, then divide it into 8 equal parts.

11. Roll each into a ball, cover with plastic wrap and let it rest for about 10 minutes

12. Take a small dough, press it into a pancake shape with your palm, and use a knife to spread it into a cow tongue shape.

13. Turn over, shape the dough into an olive shape and pinch the edges tightly. Here I made a mistake: because there were no shaping diagrams for this type of bread in the book, and the shaping diagrams were all concentrated in the first few pages, I didn't pay attention at the time, and naturally rolled it from the long side. Later one day when I was flipping through the book, I realized that I should have rolled it from the short side.

14. Grease the baking pan with a small amount of butter (not included in the amount), sprinkle with high flour and shake off the excess flour

15. Place the shaped bread in the tray and keep enough distance between them.

16. Cover with plastic wrap and let it ferment again until it is twice as large, then take it out and brush with egg liquid

17.Put the shortcrust pastry on the bread in the shape you like.

18. Sprinkle some chopped walnuts

19. Put it in the preheated oven and bake at 150 degrees for about 20 minutes (the oven temperature and time can be adjusted according to your own oven)
