The so-called oatmeal is actually the flour obtained after processing oatmeal. This kind of flour contains many nutrients needed by the human body, and the content of medicinal ingredients is also very high. Regular consumption can treat and prevent diabetes, coronary heart disease, arteriosclerosis, hypertension and other diseases. Oatmeal also contains linoleic acid, which can help the body metabolize. So how to make oatmeal? First, how to make oatmeal noodles ? Put the oat flour in a basin, boil the water, hold the kettle with one hand and use chopsticks with the other hand, pour the boiling water on the oat flour little by little, stir evenly and knead into dough. Take out a piece of the kneaded dough, knead it into a cylindrical shape, put it in the pasta machine, cover it and tighten it. Then you can make oat noodles. Second, boil water. After the water boils, immediately pour water that is twice the amount of the noodles on the noodles. You don’t have to pour all the water at the beginning. Pour more than half of the water and check the noodles. If there is still a lot of dry noodles, pour more water. However, it is better to pour all the water and noodles at once. After pouring the water, use chopsticks to stir the noodles into pieces, like below. It only takes a few steps to stir it. After stirring the noodles into lumps quickly, use your hands to knead the noodles into a smooth dough. This step is the same as kneading flour, but because hot water is used, the noodles will be relatively hot, so be careful when kneading to avoid getting burned. When I first started making oat noodles, I often let the noodles sit for a while at this step so that they would not be too hot before kneading them. This step is also quick, at least faster than kneading flour because oatmeal is not very sticky. Third, at this point you need to roll the dough, press it down hard with your fist, then fold it over, and press it down with your fist again. Repeat this about ten times, and you'll be done. This step is mainly to make the noodles more chewy. Finally, knead the dough into a smooth dough. The main purpose of using boiling water to knead the dough is to make oat noodle dumplings. If you use wet water or cold water, the dumplings basically cannot be pushed up. If you are making oat noodle fish dishes or the like, you can use warm water. After the dough is kneaded, pinch off a small piece and place it on a grating surface. I used a small piece of marble, but you can use anything smooth. First, apply some oil on the marble, any kind of cooking oil will do. How to knead oat noodles? There are two ways to knead noodles: one is to use boiling water, and the other is to use cold water. In the past few years, my family used boiling water to knead the dough. Now my mother thinks it is also easy to knead the dough with cold water. We just get up early in the morning, coat the buckwheat noodles with cold water, leave it for the morning, and then make it at noon. In these two methods of kneading dough, the ratio of water to oat noodles is basically 1:1. Of course, this is related to the moisture content of the oat noodles themselves. The dough should generally be a bit harder so that it is less sticky and more refined. |
