After basic fermentation, divide the dough into 5 portions (three portions of 180 grams are placed in a 1-pound toast mold, and two portions of 270 grams are placed in a water cube each), exhaust the air, roll into a ball, cover with plastic wrap, and relax for about 15 minutes in the middle. Turn over and fold up the left 1/3 of the dough, then fold up the right 1/3. Then, use a rolling pin to make it longer. 6. Roll the dough with the closed end facing down. Put them into the toast mold brushed with unsalted butter for final fermentation. The final fermentation temperature is 38℃, about 40-45 minutes, and fermentation is 80% full. Brush the surface with egg wash (extra amount), put it in the preheated oven, and bake at 180℃ (lower middle layer) for about 30-35 minutes.
