5. Place the dough with the seam facing downwards, flatten it to release the air, and then gently roll it into a large piece.

6. Pour out the excess rum from the soaked raisins and apply the rum to the dough with a brush.

7. Sprinkle cinnamon powder on the dough and evenly place raisins.

8. Roll up from top to bottom and pinch the opening together. After shaping, cut the dough into equal parts

9. Dip some flour with chopsticks and press the middle of the dough for the final fermentation, 40 minutes. The temperature should be higher than the basic fermentation, about 38 degrees.

10. After fermentation, brush with egg liquid and bake in a preheated oven at 170 degrees, middle layer, for 15 minutes. (Ovens vary from home to home, so you can increase or decrease the baking time.)
