9. Cut open the neck of the geoduck along this double line

13. Cut the geoduck into thin slices

14. Slice the fennel root bulb and place it in a bowl

15. Add the scraped green apple, onion and minced ginger

16. Add olive oil and apple paste to the sauce

17. Stir evenly to taste

18. Place in a small ramekin on a plate

19. Finally, pour the remaining sauce on the plate
