How to make Baiyun chicken feet

1. Cut the nails of the chicken feet, wash and drain, cut the ginger into thin strips, and set aside rice vinegar, sweet and spicy sauce and ice water.

2. You bought refrigerated chicken feet, so boil water first to blanch them slightly to remove the frozen taste, and then rinse off the foam with clean water.

3. Boil another pot of water, put the chicken feet in when the water boils, cover with lid and cook for 4 minutes, then turn off the heat and let the chicken feet simmer in the pot with lid on for 15 minutes.

4. After 15 minutes, remove the chicken feet, rinse off the foam with clean water, and then soak them in lemon ice water for 20 minutes.

5. After soaking for 20 minutes, remove the chicken feet and drain the water.

6. Place the drained chicken feet on a plate and mix well with a large tablespoon of sweet and spicy sauce, three tablespoons of rice vinegar and shredded ginger.

7. Put the mixed chicken feet in a fresh-keeping box or cover a plate with plastic wrap and put it in the refrigerator (no need to refrigerate) for a few hours, or eat it the next day.

8. It’s done. I made it yesterday and ate it today. During the refrigeration process, take it out, stir it, and then put it back into the refrigeration.
