New Orleans French Bread Recipe

1. Mix various powders, water, sugar, milk powder, soak autolyse for 30 minutes, add salt and yeast, knead until the gluten begins to form, add softened butter, knead until a film is formed (between the expansion stage and the completion stage)

2.1 Divide into 2 portions, deflate, roll into balls, and relax for 20 minutes. Roll each piece into a 35X15CM rectangle, pinch the seams, point the two ends, and lengthen it to 40CM. Place on a baking sheet lined with baking paper

3.2 Cover and ferment at room temperature (24C) for about 80 minutes until it doubles in size. Exhaust fold at 50 minutes

4. Secondary fermentation at room temperature until it doubles in size, about 45-60 minutes. Spread water on the surface and cut the bread (note that the direction of cutting this kind of bread is different from the traditional baguette, it is more horizontal, and you don’t need to cut it at an angle, just cut it perpendicular to the dough)

5. Place an empty baking tray in the oven, preheat to 260C, pour some boiling water into the baking tray to generate steam, and close the door. Put the baking tray with the dough into the oven, pour a cup of hot water into the baking tray below, and close the door. Lower the temperature to 218C and bake for 20 minutes, then lower the temperature to 190C and bake for another 20 minutes until the bread turns golden brown.
