1. Clean the yellow croaker (you can keep the head or remove it, my pot is a bit small, so I removed the head), drain the washed yellow croaker, and wipe all the water off the fish with kitchen paper

2. Chop the green onion and ginger, chop the garlic into small pieces, and break the dried chili into small pieces

3. Cut tofu into cubes

4. Apply a thin layer of starch on the fish

5. Heat the pan, rub the pan wall with ginger slices, then pour in oil (to prevent the fish skin from breaking when frying, steps 2, 3, and 4 are very important)

6. Put the fish in when the oil is slightly hot, turn it over after 2 minutes, and fry for another 2 minutes

8. Add soy sauce, cooking wine and salt

9. Then pour in the tofu cubes

10. Add hot water to the pot, cover the fish and tofu, bring to a boil over high heat, turn to medium-low heat, add vinegar and cook for about 15 minutes

11. Add a little sugar before serving and cook for a while.
