How to make Doudouxiang snowy mooncakes

1. First, cover the wheat starch, rice flour and lotus paste dough with plastic wrap, steam them in a steamer for 30 minutes, then take them out and let them cool for later use.

2.1 Then filter out the bean paste through a sieve while it is still hot.

3.2 Cook the soaked white kidney beans over low heat for about one and a half to two hours.

9. Add the filtered pea soup to 80 grams of pea paste and mix. Take 2 grams of agar powder and soak it in clean water for later use.

10. Cook the pea paste over low heat until it becomes a slightly thick paste, then add appropriate amount of sugar and stir well.

11. Then pour in the soaked agar powder and cook until it is completely melted and evenly turned off the heat.

12.1 After it is shaped, remove it from the mold and pour it out for later use. This is the pea yellow that we often eat.

13.2 Pour the cooked pea paste into the mold and let it cool.

14. Take 120 grams of red bean paste, add 20% cooked flour into it and knead into dough for later use. The red bean paste filling is purchased from the market, so there is no need to process it separately, just add cooked flour.

15. After the raw materials are prepared, knead them into small doughs as required. The skin material can weigh 45 grams and the filling material can weigh 35 grams. You can add materials according to your preferences. For these skin materials and filling materials with high moisture content, the group-purchased molds can hold about 90 grams, and the baked mooncakes with skin and fillings are about 75 grams. You can add materials according to this amount.

16. Divide the raw materials into small doughs, roll them into balls, and then separate the colors for wrapping.

17. Use red bean paste as the main filling, and wrap the lotus seed paste filling in the red bean paste dough.

18. Pea yellow can be directly molded.

19. After all the materials are wrapped, use the mold to press the printing and demould to complete.

20. It can be eaten directly after it is done.
